Roasted Zucchini, Sweet Peppers, and Red Onion

Ingredients
2 small or 1 large zucchini, about 2 cups sliced, 1/2" slices1 large red bell pepper, cut into large chunks1 red onion, peeled and cut into fourths, separatedsea saltblack pepper2 tbsp olive oil
Directions
Heat oven to 400 degrees F.

Combine vegetables in large bowl. Drizzle with oil and sprinkle with salt and pepper. Add any other spices desired. Toss to coat vegetables.

Spread vegetables in large baking or roasting pan. Cook, stirring at least twice, for 30 minutes or until all veggies are tender. Serve hot.
