Creamy low-fat Spaghetti Carbonara

3 slices bacon or 1.5 oz. pancetta1/2 medium onion2 cloves garlicBertollli olive oil spray2 c. skim milk1 c. fat-free Half & Half3 oz. Velvetta 2%8 oz. Greek Cream Cheese1/2 c. grated Parmesan1/2 tsp. nutmeg1/2 tsp. ground pepper
Fry bacon/pancetta, chopped onions and garlic in large frying pan with olive oil spray.
Add milk, half & half, cream cheese, Velvetta, nutmeg, pepper. Stir frequently. Do not boil. Add parmesan, stir until melted.
Cook pasta and drain.
Add pasta to sauce.
Sprinkle with chopped parsley and serve.
Serving Size: Makes 9 one cup servings (1 c. pasta / 1/2 c. sauce)
