Curried Lentil Soup

8 cups ham stock4 cups water 6-8oz smoke picnic shoulder or other ham cut into cubes16 oz dried lentils3 cups sliced carrots1 cup diced celery1/2 cup diced onion3 tablespoons mild curry powder (This may be adjusted according to personal taste)1 8 quart stock pot.
Add ham stock to pot, along with lentils, carrots, onions and celery. Add enough water to bring liquid level up to within one inch of pot edge. Add curry powder to taste and bring entire pot to a rolling boil. Boil for 10 minutes and then drop the heat to maintain a strong simmer for 60 minutes or so. Test lentils for taste and adjust seasonings if desired. Let stand 30 minutes before serving to allow soup to cool and starches to thicken the broth.
Serve with bread rolls or soup crackers if desired.
