Ingredients
Two large skinless and boneless chicken breasts1 small fresh pineapple chopped or tinned chunks2tblsp tomato paste2tblsp soy sauce1tblsp balsamic vinegar1tsp brown sugar6oz basmati rice3oz frozen peaswater1tbsp oil
Directions
Serves 3-4.
Cut the chicken into chunks and fry in the oil until white all over. Put the rice and peas into a large saucepan and follow the instructions on the rice packet to cook them.
Add all the other ingredients to the chicken with enough water to come half way up the frying pan, bring to a simmer and cook gently for around 15-20 mins.
My family enjoy this meal with peanuts sprinked over the rice.
