Super Quick Bread

Ingredients
1/3 cup almond flour1 T coconut flour, sifted1/2 tsp baking powderpinch of sea salt 2 T coconut oil, melted (about 1 tsp more for greasing the cup)1 egg2-3 T water, if needed
Directions
1. Place the first four ingredients in a small bowl and stir to combine.
2. Place 1 tsp melted coconut oil in a 2-cup glass measuring cup or a large coffee mug, and swirl it around to coat all sides.
3. Add the egg and the 2 T of melted coconut oil to the dry ingredients. With a fork, mix well. If the batter is too thick, add 1 T of water at a time until it reaches a thick muffin batter consistency.
4. Pour the batter into the measuring/coffee cup.
5. Place the cup in the microwave and cook on high heat for 1 minute 20 seconds to 1 minute 45 seconds, depending on your microwave.
6. Let the "loaf" cool for 1 minute in the cup, then invert it onto a plate, tapping the bottom of the cup if necessary to get it to release. SERVE
