Paleo Spiced Pumpkin Muffins

Ingredients
2 cups blanched almond flour3 tablespoons coconut flour1 teaspoon baking soda2 teaspoons cinnamon3/4 teaspoon nutmeg1/4 teaspoon cloves1/4 teaspoon ginger1/4 teaspoon salt3/4 cup canned pumpkin1/3 cup maple syrup or honey2 large eggs2 tablespoons melted coconut oil1 teaspoon vanilla extract
Directions
1. Preheat the oven to 350 degrees.

2. Line a muffin tin with baking cups.

3. Place all the dry ingredients into a small bowl and mix to combine.

4. Place the remaining wet ingredients in the bowl of a stand mixer and beat on high until combined, or use a hand mixer.

5. Slowly incorporate the dry ingredients into the wet, mixing until smooth.

6. Gently mix in chocolate chips, or pepitas if desired. Not included in the nutritional information.

7. Pour the batter into the prepared muffin tin, filling each cup 2/3 of the way full.

8. Bake for 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
