Paleo Carrot Zucchini Fritters

Ingredients
3/4 Cup grated carrots3/4 Cup grated zucchini1 egg, scrambledsalt and pepper to tasteoil, grease, butter of choice
Directions
1. Wrap the grated veggies in a think dish towel and squeeze to remove water. Heat skillet with hot oil.
2. Mix egg, veggies, salt and pepper.
3. Take a small handful, form a slightly flat ball and add to hot oil.
4. Press gently with a fork to flatten more. Keep them about 3 inches in diameter.
5. Cook 4 to 5 minutes per side.
6. Drain on paper towel and eat while hot or keep warm in a low oven and make another batch.
