Tomato, Basil and Quinoa salad

Ingredients
2 cups quinoa3 1/2 cups waterpinch of sea salt1 cup finely diced red onion1 cup of chicpeas1/2 cup of diced mozzarella cheese1 cup of chopped basil leaves6 tablespoons of basalmic vinegar6 tablespoons of extra virgin olive oilsalt and pepper to taste
Directions
Place quinoa water and pinch of salt to a 2 quart pot. Cover and bring to a boil. Reduce the heat to a simmer for 15 to 20 minutes. Allow quinoa to cool. Add to the remaining ingredients in a large bowl and mix. Cool in the refrigerator for 20 minutes to an hour then serve.
