Susan's Low Carb Egg Drop Soup

1/4 C diced onions2 C homemade chicken brothsalt and pepper to taste1 tsp soy sauce1/8 tsp ground ginger2 eggs, slightly beatenoptional (not counted in nutritional value) chopped green onions for garnish.
1. In a nonstick pot, put in the diced onion and cook until translucent (if you need, add some oil).
2. Add the broth, soy sauce, and ginger. Add salt and pepper to taste. Bring to a boil.
3. Stir the broth in a clockwise motion, and while it is still twirling, add the beaten eggs. Continue to stir.
4. Pour into bowls. If you like top with chopped green onions.
