Ingredients
chop 11 oz chicken breast into small pieces. Chop into pieces 1/2 inch square a large crisp apple. Or use 2 small lunch box size apples. Leave skin on it for color, texture and fiber. Add to bowl. Add 3 oz chopped pecans. Add 1/4 cup dried raisins. You can also add other spices for variety: parsley, Rosemary, red pepper chipotle, or basil to change up the taste. Add 1 Tbs of HELLMAN'S mayonnaise. Also add 3 Tbs of Chobani 0% Greek yogurt. Mix lightly. Add salt and cayenne pepper to taste. I usually make about 8 turns on the salt mill, but I'm not big on salt. If you cook your own chicken, you may need to add more salt, up to 1/2 tsp. A precooked chicken often has salt added to it. (1/4 tsp is probably too much!)Serve on bed of spinach, mixed greens, or toasted bread.0.25 cup (not packed) Raisins 2 tbsp Basil 3 oz (20 halves) Pecans 0.25 tsp Pepper, red or cayenne
Directions
This is a cold meal. Use precooked or leftover foods. Let set up for an hour or so in fridge to get flavor to balance. Serving Size: 2 servings 2 cups each OR 4 servings 1 cup each.
