Mitchel's Chicken Nuggets

Ingredients
1 boneless, skinless chicken breast1/2 C panko bread crumbs (pulsed to fine pieces in the bullet)1/2 C whole wheat flour1/4 C flax meal1 egg2 tbsp. Lowery seasoned salt1/4 C coconut oil
Directions
Cut the chicken breast into 1.5 inch pieces and set aside.

Pulse the panko bread crumbs in the Bullet. or other tool.

Combine the bread crumbs, flax meal, whole wheat flour and seasoned salt in a bowl.

Beat the egg in another bowl.

Heat 1/8 cup of coconut oil in a frying pan.

Dredge the chicken in the panko mixture, then the egg, then the panko mixture and add to skillet with heated oil.

Continue with half the chicken.

Drain the oil and rinse the pan, then repeat the process above with the second half of the oil and chicken.

Serving Size: approx. 30 1.5 inch pieces
