Homemade Chicken Noodle Soup

Ingredients
2 boneless, skinless chicken breasts1.5 cups carrots, strips or slices2 stalks celery, strips or slices.5 cup onion, diced or thin slices1 cup chicken broth 3 cups water1 tbsp Extra Virgin Olive Oil2 tbsp Poultry Seasoning1 tbsp white or black pepper2 cups Enriched Egg Noodles
Directions
Cut chicken into strips or cubes, then lightly brown in Olive Oil. When chicken is brown add chicken broth, water, and vegetables. Bring to a boil. Boil until carrots are softened ( approx. 10 minutes). Reduce heat, add the noodles and seasonings. Simmer for 20 - 30 minutes.
Makes 12 1 cup servings.
This recipe also freezes well.
