10 eggs or egg whites 2 Turkey franks, chopped1 cup fresh kale, chopped1/2 red bell pepper, chopped1/2 cup onion, chopped1 tsp. black pepper1 Tbsp extra virgin olive oil2 oz. shredded cheddar Cheese
Preheat oven to 350 degrees. Combine all ingredients in bowl and mix until eggs are beaten and everything is combined. Pour into a well-greased muffin tin and bake for about 15 minutes or until eggs are cooked through.
