World's Best Split Pea

Ingredients
Split Peas, 3 cup Onions, raw, 1 medium (2-1/2" dia) Celery, raw, 2 cup, diced Carrots, raw, 2 cup, chopped Water, tap, 8 cup (8 fl oz) *Pork, fresh, leg (ham), shank half, separable lean only, raw, 2 lb Ham Bone
Directions
Put ham shank in large pot
Cover with water
Add split peas
Simmer for 2 or 3 hours
Remove ham and cut into bite size pieces
put it back into the soup
Add vegetables
simmer for as long as you want
remove bone
serve
Freeze and store for quick meal
