Directions
Toss cubed eggplant and apples in oil in which you've already toasted fennel, cumin, and asafoetida briefly. Add chili powder, turmeric and garam masal. Add a cup of water after about 5 minutes of tossing all the ingredients together. Cover and let cook on medium heat till apples soften.
