Lemon Poppyseed Biscotti

Ingredients
2 eggs + 3 egg whites1 c sugar1/2 c oil + 1/4 c water1/4 lemon juice plus grated lemon rind4 c flour 2 tsp baking powder3 tbsp poppy seedsMix wet ingredients together with sugarAdd flour, baking powder, poppyseedMix together to form soft dough. If too wet add a little more flour. Wet hands with water and form 5 logs. Flatten tops. Bake 350 for 1/2 hour until bottoms are lightly browned. Remove from oven. Turn oven down to 275. Cut each log into 12 pieces. Return to oven until cookies are dry -- about 20 minutes.
