Mom's Hash Brows

Ingredients
2 cup, shredded Mozzarella Cheese, whole milk 6 tbsp Butter, unsalted 1 tsp Salt 1 cup, chopped Onions, raw 6 cup diced Potato, raw 2 pepper Jalapeno Peppers 2 cup Great Value Sharp Chedder Cheese (Shredded) 4 large Egg, fresh, whole, raw 2 cup, diced Ham, regular (11% fat)
Directions
If using frozen hash brown potatoes, press between paper towels to remove moisture. Press hash browns onto bottom and up sides of a 9” x 13" casserole dish to form a crust. (If you are using fresh potatoes dice up and then boil them until they are almost fully cooked. Dry and then place into casserole dish) Drizzle melted butter over crust. Bake crust in preheated 425 degree oven 20-25 min until lightly browned. Remove from oven. Reduce oven temp to 350 degrees. Toss together the ham and cheese. Place in crust. Beat the eggs, milk and salt together to form a smooth mixture. Pour over ham and cheese. Bake uncovered, in the 350 degree oven 25-30 min or until knife inserted near the center comes out clean. Let stand for 10 min before serving.


Serving Size: makes about 12 servings depending on how much you take.
