Anita's Homemade Meatballs

Ingredients
2 large Eggs1/4 tsp Salt 3 clove Garlic , minced1/4 cup Flat Leaf Parsley, fresh, chopped 24 oz Ground beef, extra lean (15% fat) 2 tbsp Milk (Reduced Fat Milk 2%) 2 tbsp Parmesan Cheese, grated 1/4 cup Bread crumbs, seasoned 1/2 cup Oatmeal, Quick Oats, pulsed in a food processor
Directions
Preheat oven to 400 degrees F.
Pulse half a cup of instant oatmeal in a food processor until it is fine like breadcrumbs.
Finely mince the fresh garlic cloves (about 2 tbsp minced).
Chop the parsley.
Beat eggs in a separate bowl prior to combining with meat.
To make the meatballs, combine meat, garlic, breadcrumbs, oatmeal, Parmesan, eggs, salt, pepper, parsley, and a splash of milk in a mixing bowl. Mix together well with hands. Roll into 25 1 1/2-inch balls and place on a broiling pan (to drain any excess grease while cooking). You can also use a cookie sheet, or place a metal cooling rack in a cookie sheet to allow grease to drain.
Bake at 400 degrees for 20 minutes. You can turn halfway through if you want crispy sides top and bottom, if they are not resting on a rack.
Place baked meatballs in a pan with your desired sauce (like marinara or your choice). Simmer meatballs and sauce for five minutes before serving.
