Ground Beef, Spinach and Egg Casserole

1 Tbsp coconut oil, melted¼ lb grass-fed ground beef½ (8-oz) pkg sliced fresh mushrooms, finelychopped½ (6-oz) bag baby spinach6 large eggs, lightly beaten¼ tsp garlic salt¼ tsp pepperCoconut oil cooking spray
Preheat oven to 400°F. Heat oil in a large
skillet over medium heat. Add ground beef and
mushrooms; cook 5 minutes or until browned,
stirring frequently. Add spinach; cook 2 minutes
or until wilted. Remove beef mixture from pan.
Whisk together eggs, garlic salt and pepper in a
large bowl. Stir in beef mixture. Pour into a 9-x
9-inch baking dish coated with cooking spray.
