Chicken Fajita Quesadilla

Ingredients
4 serving Tortillas, MISSION, flour tortilla, 8 inch, 49g 0.66 cup Kraft 2% Shredded Cheddar Cheese 1 tbsp Extra Virgin Olive Oil 1.50 cup Onions & Peppers, Sauteed 6 ounces Chicken Breast (cooked), no skin, roasted
Directions
Chop or slice onions and peppers, saute in pan with olive oil until carmelized. Cook seasoned chicken, cut into chunks or shred. Spray one side of tortilla and place in the bottom of pan. Sprinkle portion of cheese onto tortilla. Place chicken and onions and peppers on top, spreading evenly to edges. Top with another portion of cheese. Cover with another tortilla sprayed with cooking spray on the outside. Turn when browned, warmed through and cheese is melted. Repeat with other quesadilla. When cooled, cut into four sections each.
