Carolyn's Mexican Deep Dish Pan Pizza

Yellow Corn Muffin Mix (1 box), 6 serving Egg, fresh, 1 large Milk, 3/4 C, nonfatButter, salted, 2tbsp, meltedYellow Sweet Corn, Frozen, 1 cup kernels Olive Oil, 1 tbsp for drizzlingOlive Oil, 2 tbsp for panGround Turkey, 1 lb Onions, raw, 1 small, finely choppedChili powder, 1 tbsp Cumin, 2 tsp Pepper, red or cayenne, 2 tsp Cheddar or Colby Cheese, Low Fat, 2.5 cup, shredded Peppers, sweet, red, fresh, 1/2 large, choppedGreen Chili Peppers, canned, .5 cup. drained & slicedScallions, raw, 2 large, choppedRed Ripe Tomatoes, 2 tomato seeded and dicedSpanish Olives - 2 Tbsp, drained & slicedCilantro, raw, 1.5 tbsp, choppedSalsa, 1 cup to pass at table
Preheat oven to 400 degrees F.
Mix togeher muffin mix with 1 egg, milk , melted butter and frozen corn.
Wipe a nonstick skillet with a little extra or vegetable oil and pour in the muffin mix. Use a large oven safe skillet, 10 to 12 inches. Place pan in oven and bake 12 to 15 munites in center of oven until light golden in color.
Brown the meat over medium high heat in a second skillet in extra olive oil. Add onion and spices and cook meat 5 minutes more.
Remover cornbread from oven and top with meat, cheese and veggies. Add pan back to oven and cook 5 minutes more to melt cheese. Garnish with cilantro, optional. Cut into 8 wdeges and serve the deep dish pan prozza from the skillet. Pass salsa at the table to sprinkle on top. Enjoy!!
