Simple Whole-Wheat Burger Buns

Ingredients
1 cup warm water1 T. sugar or molasses1 T. active dry yeast1 tsp. sea salt (or salt of your choice)1 tsp. oil 2 cups whole-wheat flour3 cups hard whole-wheat flour (you can use bread flour)
Directions
Dissolve sugar in water in a bowl that will hold 1 quart for each cup of water. Sprinkle in yeast. Let proof in a warm place 10-15 minutes. Stir in salt, oil and bread or hard wheat flour (1 cup), Stir well, 3-5 minutes. Let sit in warm place until puffed up and bubbly. Stir 5-10 minutes. Add whole-wheat flour gradually, stirring much more than needed to mix. When it becomes hard to stir, add a little more flour and remove spoon by cleaning with flour. Keep enough flour on hands to keep dough from getting them to messy, but not to much to make dough dry or stiff.

Roll out 1 inch thick. Cut rounds with a large circle cutter, such as a wide-mouth mayonnaise jar, etc. Place about 1 inch apart on oiled cookie sheet (roll out the scraps again and cut out more). I have shaped these by hand and they have turned out great, just be sure to not over knead and keep them approx. 1 inch thick. Let rise in a warm place until double in size.

Bake at 375 degrees for 10 minutes and then at 250 degrees for 10-15 minutes longer.

Then just cut the buns in half and put on your favorite sandwich fixins :)

    Again, the nutritional info is way off. These work out to 352.8 cals, 2.6g fat, 12.2g fiber and 13.3g protein per roll (based on 6 rolls). Just don't want anyone's counts thrown off by the discrepancy. Recipe looks good though! =) - 4/30/08
