Avocado Egg Salad

Ingredients
4 large Hard Boiled Eggs (chopped)1 Tbsp Lemon Juice1 Avocado, California Haas (mashed, without seed or skin)1/4 cup fresh minced Onion1 tsp or 1 packet Yellow Mustard 2 dashes Salt 2 dashes Pepper
Directions
Cut avocado lengthwise, twist and remove seed.
Spoon out and mash the avocado with a fork.
Add 1 Tbsp lemon juice.
Peel and chop 4 hard boiled eggs and add to avocado.
Add onion, mustard, salt, and pepper to taste.

Serving Size: makes 2 servings (about 1/2 cup each)
