Cabbage Roll Casserole

Ingredients
1 lb ground turkey 1 tbsp olive oil 1 medium onion, chopped 1 clove garlic, minced 1 14 oz bag cole slaw mix 2 cans diced tomatoes 1 can tomato sauce 1/2 cup water1 bag boil-in-bag brown rice1 tsp sea salt1 tsp ground black pepper
Directions
Cook turkey in olive oil with onion and garlic until browned. Add cole slaw mix, tomatoes, tomato sauce and water. Stir until combined. Bring to a boil, then cover and simmer 20 to 25 minutes or until cabbage is tender. While cabbage mixture cooks, prepare 1 bag boil-in-bag brown rice. Add rice to cabbage mixture. Season with salt and pepper.

Serving Size: Makes 4 1-1/2 cup servings
