spinach quiche

2 T butter 3/4 cup bread crumbs4 eggs1 cup milk2 cups shredded cheddar cheese1/4 cup flour1 bunch fresh spinach(chopped)1/4 cup chives or green onion(chopped)salt and pepper to taste
To make the crust melt the butter in a small bowl, add bread crumbs and mix well. Press into a 8-9" glass pie plate. Place it in the oven to heat before you pour the egg mix into it (important if you don't want soggy crust).
In a seperate bowl wisk eggs, milk, salt and pepper. Add flour to the shredded cheese and coat well, then pour into egg mix. Fold in spinach, and green onion. Pour everything into the hot pie plate and bake for 30 min. Insert a clean knife into the center to check for doneness.
