Quinoa Tabbouleh

Ingredients
1.75 cup (8 fl oz) Water, tap 1 cup 365 Organic Quinoa .5 cup, chopped or sliced Red Ripe Tomatoes .5 cup Parsley .5 cup (not packed) Raisins 0.25 cup slices Cucumber (with peel) .25 cup Lemon Juice .66 tbsp chopped Onions, raw 2 tbsp chopped Scallions, raw 1 tbsp Extra Virgin Olive Oil .5 tsp Salt .25 tsp Pepper, black
Directions
Combine water and quinoa in a medium saucepan; bring to boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove form heat fluff with a fork. Stir in remaining ingredients. cover; let stand 1 hour. Serve chilled or at room temperature.
