8 serving dried red chile peppers.4 chopped , 4 whole4 clove Garlic finely chopped1 large onion finely choppedGinger Root,1/4 cup slices or a 2" piece finely chopped1 tsp Cumin seed ground1 tsp Coriander seed ground1 tsp fenugreek ground1 tsp Garam Masala1.75 cup Canned Tomatoes (14oz)15 grams Tomato Paste (1 TBSP)24 oz Tyson boneless, skinless chicken breast 2 tbsp Extra Virgin Olive Oil divided
Heat 1Tbsp oil in pan add onion, garlic and ginger stir until golden,
Add cumin, coriander and fenugreek cook over medium for about 5 min. Stir in tomatoes ,tomato paste and the whole and chopped chiles, bring to a boil and cook over low heat for 10 -20 minutes to let flavours meld. Meanwhile add remaining oil to a skillet and sear the chicken until browned on all sides , add to tomato mixture cook until chicken is done. Serve with Raita, rice or veggies.
