The Best and Healthiest Pancakes/Waffles Ever!

2 1/2 cups buttermilk (fruit juice or water)2 eggs (opt.)3 T olive oil (for crispness)1 1/2 tsp. vanilla2 1/2 c. millet (brown rice or buckwheat) uncooked3/4 c oats3 T honey1 tsp. salt (to taste)3/4 tsp. baking soda1 T. baking powder
1. Preheat waffle iron at highest temperature or griddle at medium-high.
2. Place in a blender and blend at high speed for 4 minutes the buttermilk, eggs, olive oil, vanilla, millet, and oats.
3. Just before baking, mix in thoroughly, but briefly, the honey, salt, baking soda, and baking powder.
4. Pour straight from blender onto seasoned or sprayed waffle iron or griddle; bake about 1 1/2 - 3 minutes.
Serving Size: 2 pancakes

***** Well, I am an idiot. I originally rated it ok cuz I screwed up the recipe and added too litte brown rice mulllet....geez. I improvised a bit and the resulting product was delicious. I would rate this 5 stars to reflect how I think it would taste considering my mess up was dee-lish! Try again.. - 1/10/09
