Giada's Detox Soup

2 skin-on-bone-in chicken breast5 oz baby spinach 6 cup water3 lemongrass stalks, trimmed and pounded1 4-inch piece fresh ginger, peeled and sliced1 carrot, cut into large pieces1 stalk celery1 shallot, peeled and halved1 bay leaf1/2 teaspoon black peppercorns1 dried Thai chile1 teaspoon Kosher salt
1. Put all ingredients, EXCEPT BABY SPINACH, into a Dutch oven or pot and bring to a simmer. Turn to low and cook for 45 minutes. Then turn it off and let it cool for 30 minutes.
2. Pull out the chicken and shred the meat, removing the bone and skin.
3. Drain the stock, discarding the solids used for flavoring.
4. Add the shredded chicken and spinach back to the stock and bring to a simmer again. Serve immediately.
