Ingredients
Four chicken breasts1half red onion chopped1 jalapeno chopped1 mango peeled and choppedhandful of cilantro deleafed
Directions
Grill, bake or steam chicken for 25 minutes. (cut chicken breast into thirds if you steam). Chop other ingredients. When chicken is done spoon cold chutney on top and serve immediately. Makes four servings. Serve with salad and/or a brown rice pilaf

    This recipe is FANTASTIC. This also works very well if you substitute the chicken with Ground Turkey, add some Chicken broth to the mix, and use Romaine Lettuce leaves as a stuffed shell kind of wrap. :) - 7/23/11
