Mediterranean Couscous Salad

Ingredients
2 C. water1 1/2 C. plain dry couscous1/2 C. peas, frozen3 TBSP lemon juice1 medium clove garlic, minced1 TBSP olive oil1 can (15oz.) chickpeas, drained and rinsed1/2 C. chopped fresh parsley leaves3 meddium scallions, chopped4 oz. feta cheese (reduced fat), crumbledFresh ground black pepper and salt to taste
Directions
1. Bring water to a boil in a medium sauce pan. Remove from heat, stir in couscous and peas. Cover and let stand 10 mins. Transfer couscous mixture to serving bowl and fluff with a fork.

2. Meanwhile, whisk together lemon juice, garlic, and oil in small bowl. Add lemon juice mixture and chickpeas to couscous, toss well to combine, and cool to room temperature, about 20 minutes. Toss in parsley, scallions, and feta. Adjust seasonings with salt and pepper. Serve at room temperature.

Makes approx. 8 - 1/2C. servings
