Eggplant Casserole

1 lb ground turkeypepper, Tony's to tastchopped onionschopped gree pepper1 tsp. chili powdereggplant (peeled, cubed and cooked)2 beef bouillon cubes1 3/4 c. boiling water1 c. raw brown rice
Brown meat, seasoning, onions and green pepper. Peel eggplant and cube it. Cook it in boiling water until mushy. Drain meat and then add chili powder and eggplant. Dissolve bouillon cubes in 1 3/4 c. boiling water. Pour over other ingredients and add raw rice. Mix well and put in casserole dish with cover. Bake at 350 degrees for 35 mintures.
