Tex Mex Tofu Scramble

Tofu, extra firm, 0.2 block Garlic, 1 clove Green Peppers (bell peppers), 1 cup, strips Onions, raw, 1 cup, sliced Beans, black, 1 cupSalsa, 2 tbsp Cumin, 1 tspPaprika, 1 tspPepper, 1 tsp
I take one whole green or red bell pepper and cut into strips. Take one half of an onion and cut into strips. Spray a pan with Pam and add the onion, bell pepper and garlic. Saute till the onion is clean and the bell peppers are tender. Reduce heat
Thoroughly drain tofu and crumble into large chunks into the pain. Add the beans, cumin, paprika, pepper and any other desired seasonings (chili pepper, salt, etc) and stir.
The tofu will further break down as you stir. Cook until the tofu is heated through.
Divide in to two plates and top with the salsa. You can also had shredded vegan cheese, and soy sour cream for a more festive breakfast dish.

I made this for dinner and enjoyed it. It didn't knock my socks off, but unlike other tofu dishes I've tried, it wasn't revolting either. Actually, it was quite tasty and I would make it again. I used the whole block of tofu, the whole can of beans and 1/2 c. salsa adjusted the calories accordingly - 7/9/08
