Slow Cooker Tex-Mex Chicken

Ingredients
1 lb boneless skinless chicken breasts, cut into 1 inch wide strips2 TBS McCormicks Taco Seasoning (reduced sodium)2 TBS flour (or 1/8 cup)1 green bell pepper, cut into strips1 red bell peppper, cut into strips1 cup frozen corn1 cup salsa (my nutritional info is based on the TGI Fridays salsa b/c it's what I had)1 cup shredded cheese
Directions
Toss chicken with seasoning mix and flour in slow cooker. Stir in all remaining ingredients except the cheese; cover with lid.

Cook on LOW for 6 to 8 hours (or on HIGH for 3 to 4 hours).

Stir just before serving. Top with cheese.

Makes 4 servings, 1 1/2 cups each.

Optional: Serve over rice and garnish with sliced green onions and cilantro. Don't forget to calculate the EXTRA calories!!

The salsa is of course loaded with sodium! I encourage everyone to find a salsa the is lower in that deptarment...I'll do the same. :)

    Sounds great and I love that it's going in the slow cooker. Because I'm doing very low sodium and sugar, would make a taco blend to taste, commercial blends are too high in salt. Corn from a cob is easy and tastes so much better. If not making salsa, I'd really look at nutrition facts for dif brands - 7/21/11
