Classic Potato Salad

6 Med Potatoes, Red (2 Pounds)1 1/4 Cups of Light Mirical Whip1 Tablespoon Prepard Mustard1/2 Tsp Salt1/4 Tsp Black Pepper1 C. thinly sliced celery1/3 C Chopped Onion1/2 C Chopped Dill Spears6 Hard -Cooked Eggs, Coarsely ChoppedLettuce Leaves (Optional)Paprika (Optional)
In medium saucepan place potatoes and a small amount of water to cover and, if desired, 1/4 tsp of salt. Bring to a boiling; reduce heat. Simmer, covered, for 20-25 minutes or just until tender. Drain well; cool slightly. Peel and cube the potatoes.
Meanwhile, for dressing, inlarge bowl combine the mayo, mustard, the 1/2 tsp salt and pepper.
Stir in celery, onion, and pickles. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6-24 hrs.
To serve, if desired, line a salad bowl with the lettuce leaves. Transfer the potato salad to the bowl. If desired, sprinkle with paprika.
Serves 12 side dish servings.
