Quinoa Chicken "Fried Rice"

2 1tsp Olive Oil 12 serving Garlic (1 clove) (by AIRAMEI) 1 small Onions, raw 1 cup Frozen Mixed Stir-Fry Vegetables (by SUHBRIAN) 2 cup, chopped or diced Roasting Chicken, light meat 1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry .75 tbsp Ginger, ground 3 tbsp Soy Sauce
Heat 1 tablespoon of olive oil. Add chicken and veggies until heated through and tender. While this is heating, in another pot, cook quinoa using package directions.
Once quinoa is cooked, add to chicken and veggies and stir until combined and heated. About 1-2 minutes
Add ginger and soy sauce; tossing gently to combine. Cook another minute.
