Banana Bran Loaf

1 cup Bananas mashed1/2 cup Granulated Sugar1/3 cup Applesauce2 large egg whites1/3 cup skim milk1 1/4 cups flour1 cup Kellogg's Raisin Bran Crunch Cereal1/2 cup chopped pecans2 tsp. Baking Powder1/2 tsp. Baking Soda
makes 16 , 1/2 inch slices
Preheat oven 350.
lightly spray an 8 x 4 loaf pan.
Mix mashed bananas, sugar, applesauce,
egg whites, and skim milk in a medium bowl.
In a seperate bowl mix together the flour, Baking powder, Baking soda, bran cereal, and pecans.
Mix together the dry ingredients with the banana mixture just until moistened.
Pour into the already sprayed loaf pan and place in oven, in the middle of rack and bake for
55 - 60 minutes or until toothpick inserted comes out clean with no wet batter on it.
Cool for 10 minutes in pan then turn out onto a cooling rack and continue to cool completely before storing or freezing for later use. If you freeze your individual slices, put wax paper between slices and store in freezer bag.
