Ingredients
2 medium sweet potatoes or yams cooked and cubed1/2 c. dried cranberries1 small red onion1/3 c. chopped almonds2 Tbsp fresh parsleyDressing:4 Tbsp olive oil2 Tbsp rice vinegar2 tsp. dijon mustardsalt and pepper to taste
Directions
Serves 6.
Cube sweet potatoes, then cook (boil or microwave) until tender. Stir in all other ingredients. Chill and serve.

    I made this tonight & it was pretty good. I didn't have any parsley so I used some chives I had on hand. I think this is something I could see myself making frequently for a good healthy salad that is a change of pace. - 5/24/12
