Quick Grilled Shrimp Skewers

Ingredients
18 Large peeled and cooked ready to eat shrimp1Tablespoon Soy sauce1Tablespoon apricot preserves1Teaspoon minced garlic1/8 Teaspoon black Pepper1/4 Teaspoon ground ginger1/4 Large onion, in large , thick slices4 Slices canned pineapple, no sugar added or 4 fresh pineapple rings cut into thirds
Directions
Thaw shrimp if frozen, mix together soy sauce, preserves, garlic, pepper, and ginger. Put onion and shrimp in marinade and refrigerate. Preheat grill to medium heat. On metal or soaked wooden grill skewers, thread shrimp, onion, and pineapple slices, in alternating order. Grill over medium heat about 5 minutes or till heated through. Don't over cook or shrimp will be tough. Serve over rice or with Sweet potato fries.

    Very tasty, but difficult to cook on a grill. Must be continuously watched and moved to ensure even cooking prevent chewiness by overcooking. I think next time I'll saute in a pan in a bit of oil, despite the extra calories. It'd be way faster and more controllable. - 5/17/08
