Beefy Minestrone Soup

Ingredients:3 tbsp. olive oil4 lbs of stewing beef cut into bite size pieces2 cups diced onion2 cups sliced carrots1 cup diced celery2 large beef steak tomatoes, diced3 garlic cloves minced1 box Knorr Beef Broth1 can red kidney beans, drained and rinsed1 can turtle beans, drained and rinsed4 large white mushrooms, diced (or canned mushrooms)2 tbsp. fresh basil1 tbsp. fresh marjoram1 cup diced parsley1 tbsp. fresh oreganoSalt and pepper to personal tastedash of parmesan cheese
Instructions:
Place the oil in a large soup pot. Heat the oil and add the onions, Cook until transparent, then add the stew meat and brown it on all sides.
Add the rest of the ingredients and bring to a boil. When boiling lower heat to lowest temperature and simmer for 40 min.
Top with a sprinkling of fresh parmesan cheese
