Directions
Season pork with salt and pepper. Rub spices into meat. Place meat in crock pot with 1/2 cup vinegar on high. Cut onion, garlic, and bell pepper. Add to Meat. Cook 7 hours. Add potato wedges. Cook another 2 hours. Remove pork and rest for 15 minutes before carving. Serve topped with freshly chopped parsley.
I was happy with how this came out, especially for a first try. The recipe is a keeper. I had enough potatoes for a few meals with sliced pork.
