Potato Soup with Bacon

Ingredients
1 tsp Thyme, ground 1 tsp Minced Garlic in water 2 serving Chopped onion 1/2 cup 79 gram(s) Oscar Mayer uncured bacon bits 4 cup Swanson Chicken stock 403 gram(s) Thai Kitchen Lite Coconut Milk ml=grams 403ml=1can 40 oz Red Potato cubed (leave peels on)
Directions
:)Place all ingredients except the coconut milk into a slow cooker.Cook on low for 8 hours. Then stir in the coconut milk. Turn heat to high and cook 10 to 20 more minutes. Use an immersion blender, which I recommend, or regular blender to puree some of the soup. (I like mine a little lumpy so I only blend a little.) Enjoy!
