Applesauce Oatmeal Muffins

Ingredients
2 1/2 c. Applesauce4 Egg Whites1/4 c. Non-fat Yougrt (Plain or vanilla)3/4 c. Brown Sugar1 1/2 c. Rolled Oats1 c. Whole Wheat Flour1 c. All-Purpose Flour1 tsp. Baking Powder1 tsp. Baking Soda1 1/2 tsp. Salt2 tsp. Cinnamon(1 1/2 c. Raisins if you like)
Directions
Mix Dry Ingredients
In a Separate Bowl - Mix Wet Ingredients
Add Wet Ingredients to Dry Ingredients
Mix only long enough to moisten (do not over mix or beat - Muffins will end up tough).
Bake at 350 for 15-20 minutes...check with toothpick.
These muffins are dense and not very pretty to look at - but mmmm good and so low in fat!

(Tip - they stick, so I use a little non-stick spray in the bottom of each of my paper cups....)

    They were dense and didn't really have a strong flavor. I tried freezing half the batch for later and they came out horrible. - 7/21/09
