Chopped Salad with lemon basil dressing

Salad:1 cup Green Beans (snap) 1 cup, grated Carrots, raw 1.50 cup Yellow Sweet Corn, Canned 2 cup, shredded Romaine Lettuce (salad) 1 cup, pieces or slices Mushrooms, fresh 1 cup, chopped or sliced Red Ripe Tomatoes .5 Avocados, California (Haas) 1.50 cup Beans, black 0.50 cup green onion (spring onion) Dressing:1 cup loose lemon basil leaves 1 tsp Cumin seed 30 mL Lime Juice 1 tbsp Vinegar Aspalls Organic White wine .5 Avocados, California (Haas) .5 tbsp Honey 2 clove Garlic
Finely chop romaine, to green beans.add corn and beans.
Place all ingredients in a large bowl and stir to combine.
Make the dressing: puree all ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary.Add a small amount of water if dressing appears too thick.
Toss salad with desired dressing and enjoy :)
Serving Size: Makes 6 large servings (approx)
