Greek Salata

Ingredients
1 small green bell pepper cut in 1" pieces1 small sweet red peper cut in 1" pieces1 small cucumber cut in 1" pieces1 pint cherry tomatoes quartered1/4c. good olive oil1/2c. feta cheese crumbles2 t. mint2t. cilantrosalt to tastepepper to taste
Directions
combine all. serve at room temp or chilled. can be eaten as a salad, in a pita, etc. leftovers are wonderful stir-fried, but leftovers are rare.
