L.R. Apple coffee cake

5 cups tart apples, chopped1 cup sugar1 cup dark raisins2 T. coconut oil2 tsp. vanilla1 egg, beaten1/2 cup buttermilk2 cups whole wheat flour1 1/2 tsp. baking soda1/2 tsp. salt2 tsp. cinnamon
In a large mixing bowl, combine apples with sugar, and raisins. Let stand 30 minutes or overnight.
Preheat oven to 350. Lightly grease a 9"x13" baking pan.
Stir into apple mixture, oil, vanilla and egg. Sift together flour, soda salt and cinnamon; stir into apple mixture alternately with the buttermilk. Stir just enough to moisten dry ingredients. Turn batter into pan. Bake 30-35 minutes or until cake tests done. Cool slightly before serving.Makes 12 large pieces.
