Lemon Balm Pesto

Ingredients
1/4 cup packed lemon balm leaves, rinsed1 Tbs onion, diced1 oz feta cheese1 pepperocini pepper
Directions
In mini food processor or 'Magic Bullet', add all ingredients. Process until chunky-smooth. With the Bullet I had to scrape and shake several times to get the leaves shredded enough. I used it as a sandwich filling, but feel free to use your imagination - probably good mixed w/ cream cheese as a cracker topping.
