Carrot Cake Bread

Ingredients
2 cups wheat flour2 eggs beaten1/4 cup Brown Sugar Splenda1/4 cup splenda1/4 tsp. Allspice1/4 tsp. Cinnamon2 carrots sliced thinly4 tbsp. butter-- cubed and softened2 tsp. Baking Powder3/4 cup skim or 2% milk
Directions
Combine flour and baking soda, add softened butter--cut butter into flour mixture using either a pastry cutter or two knives. Make sure that butter is mixed in well.

Combine all other ingredients mixing in with flour/butter mixture using a wooden spoon or spatula.

Makes 2 loaves or 18 small muffins. Preheat oven to 350 degrees. For the two loaves the cook time is 45 minutes, for the muffins it's around 30 minutes.
