Masoor Dal (Red Lentils)

Ingredients
2 cup Lentils 1 1tsp Coconut Oil 3 clove Garlic 1 tsp Cumin seed 4.5 cup (8 fl oz) Water, tap 1 tbsp Coriander leaf, dried .25 tsp Pepper, red or cayenne 1 tsp Salt
Directions
1. Rinse lentils and pick out any impurities, such as stones and debris.
2. Heat oil in a large saucepan over medium heat. Add garlic, onion, and cumin seeds, and cook, stirring frequently, for about 3 minutes, or until garlic begins to turn golden brown and onion becomes translucent.
3. Add water, lentils, coriander, cayenne pepper, and salt, and cook over medium-low heat until beans are mushy but still retain some distinctive texture, about 25 minutes. Adjust water or cooking time to reach your desired consistency.
4. Serve over rice.
