Leek, Potato and Bacon Soup

25 g (1 oz) butter150 g (6 oz) leeks sliced finely150 g ( 6 oz) potato peeled and diced75 g ( 3 oz) lean bacon chopped (or use bacon bits)145 ml 1/4 pint of milk290 ml 1/2 pint of chicken/vegetable stockGround black pepper to tasteCream (optional)
Saute the leeks and bacon in a pan until they are soft about 5-10 minutes.
Mean while put the potatoes in the microwave and cook for 4 minutes.
Add the potatoes and the stock to the leeks and bacon. Cook until the potatoes are tender and then use a blender to liquidize.
Add the milk, cream and pepper and simmer for 2 minutes then serve.
